Chemical Modifications of Starch; A Prospective for Sweet Potato Starch

The current review presents the potential chemical modifications and applications of sweet potato starch in food non-food industries. Native general particularly characteristics have several functional features biomedicine as well industry. Modified is expected to enhance such discussed this review. For instance, due polymeric branching nature starch; usually less soluble, absorbs water oil, shows a strong ability bind iodine. Also, native starches significantly lower digestibility values under enzymatic treatment. Starch modifications, therefore are designed one or more above-mentioned limitations; thereby, modification can alter physicochemical improve its characteristic.
 Starches be modified using physical methods (annealing, heat moisture treatment, pre-gelatinization, other non-thermal processes), (etherification, acetylation, acid modification, cationic linking, esterification, cross-linking, oxidation), methods, genetic alteration process combination them.
